Northern Velvet combines the botanical smoothness of Purity Old Tom Gin with a touch of homemade raspberry syrup. This frothy, berry-kissed cocktail is light yet satisfying, offering a unique, silky texture with every sip.
INGREDIENTS
2 oz / 6 cl Purity Old Tom 34 Organic Gin
1 oz / 3 cl raspberry syrup (recipe below)
1/2 oz / 1.5 cl fresh lemon juice
1/4 oz / 1 cl egg white
Raspberry Syrup Recipe:
1/2 cup fresh raspberries
1/2 cup sugar
1/2 cup water
In a small saucepan, combine fresh raspberries, sugar, and water. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the raspberries break down (about 5 minutes). Remove from heat and let it cool. Strain the mixture through a fine-mesh sieve to remove the seeds. Store the syrup in a sealed container in the refrigerator for up to one week.
METHOD
In a shaker, combine Purity Old Tom Gin, raspberry syrup, lemon juice, and egg white. Dry shake (without ice) to create a frothy texture, then add ice and shake again until well-chilled.
